I dual Boot with WinME and Win2000 purely because Win2000 does some funny stuff with games. Win2000 is a good, solid operating system, and will run 20 to 30% faster than win98 + ME with your system.

I also dual boot, but mostly use Windows ME because Win2K doen't support some of my hardware. Make sure drivers written for Win2K are avalible for your hardware first.
I like the feel of Windows 2000(more stable and faster once it gets going) but Windows ME is easier to setup and has more features.
To dual boot: install Windows ME first then Install Windows 2000 on a different partition. It will automatically set itself up to dual boot.

If you plan to play games most with your PC, stick to WinME. However, Dual Booting would allow you to try using a particualr game in Win2000 environment with out having to Reinstall WinME once you find it doesnt work.
Also, when you install Win2000, make sure you either install it on it's on partition, or make sure you DO NOT Convert your C: drive to NTFS. Keep it at Fat32. WinME will NOT read NTFS drives.
