I was given the task to research about Linux servers in a windows environment. Which version of Linux would best be suited for this? How does Linux handle user authentication? How strong is Linux as a server? Any other information is appreciated as well. Thank you.

When you say Linux server what are you looking to serve? If you looking for a file server then you just pick a version of Linux, lets say redhat or debian and you install Samba which is used to setup Windows shares on a Linux computer and provide Linux computers the ability to see windows shares on windows computers. It can also share printers as well as be an NT PDC, not a BDC and not have a BDC. It is also pretty easy to configure for basic things and can authenticate to an NT domain. Like any Server OS the Server is only as good as the Administrator.
I would say download a version of Linux, install it and go to some websites such as <a href="http://www.linuxnewbie.org" target="_blank">www.linuxnewbie.org</a> for tutorials and pickup a book by O'Reilly
