how to set them up.. the speedtouch documentation is rubbish ...

Depending on your release the manuals are actually pretty detailed (I only looked at the 4.2 manual):

Rel 1.0 User's Guide (http://www.speedtouchdsl.com/pdf/ST570_usersguide_R1.0.pdf)

The basics though are change your ssid, enable mac filtering (wep too if you are really paranoid) and the other usual router stuff (ie user and pw to connect to service). Then configure your clients accordingly.
