how do you back them up?

Either export them to a PST file and put them someplace safe or use Tools/Options/Maintenance/Store Folder to see where the current path is and backup everything to another folder.
Tip: Use the Store Folder to move the default location to a shorter-easier to access folder. I've renamed 'My Documents' to 'Data' and have an 'OEX' subfolder in there.

Outlook Express will import .pst files. With the second method (copying the folder) yes, if you just backed up the folder you can restore it with the same software.
