Simple, they change all the cards between the two screens. They just alternate the pattern of cards, the suits, or numbers so it's more of a trick than anything.

Darn Mrs. Pak though it was cool for a minute then she wrote the cards down and compared! Thought I had her for a minute.

I seen that one a while back and had to figure out how it was done.
Needless to say, that simply changing the suits from clubs to spades or hearts to diamonds is pretty sneaky.
Good trick though. It'll definitely get anyone the first time.
