Imagine Fred, a magician, is carrying 3 pieces of gold each piece weighing one pound.

While taking a walk he comes to a bridge which has a sign posted saying the bridge could hold only a maximum of 180 pounds. Fred weighs 178 pounds and the gold weighs 1 pound each. Fred reads the sign and still safely crossed the bridge with all the gold.

How did he manage this?

But more likely crossed the bridge naked having bundled his clothes and thrown them to the other side.

because all advisories are posted with a degree of error factored into them so if the max weight was 180 and he would have been at 181 the weight would still be supported.

This is clearly the solution the author of the riddle intended, but I contend that it won't actually work. The extra force caused by launching and catching the extra gold brick will push the magician's effective weight above 180 lbs at those two moments, collapsing the bridge.

Seems to me his best option is to throw one of them over and then just walk. :D

I was going to give you a bonus point for thinking this up, you little... but then started cogitating about this a bit:

When juggling, are two of the three items up in the air at the same time or not?

And would that impact the total force exerted against the bridge?
