Some Service providers can one click a "push" message to configure the phone (it's not a text message ) But again, not all providers give this service, mine does not.

What happens is that all the customers info is put into a database (Siebel, Axium, etc) along with the ICCID and the IMEI numbers. Then there is a propagation period of like 1 minute up to 24 hours. During that time, all the phones configuration is completed over the cellular network. This includes GPRS (or even EDGE, or whatever) settings. Many phones that I've seen include profiles for GPRS. For instance, you can accept your default GPRS or if you travel, you can manually configure a new GPRS (if you know the settings ahead of time).
