All right, someone already mentioned my all-time favorite - DESCENT - so I'll have to improvise...
Lode Runner and Lode Runner Championship come to mind.
Planetfall and the Zork series kept me awake many nights. Even had a detailed 3D construct of the Planetfall environment. Does that indicate some form of dysfunction?

For those interested, Descent now has a 3D port for 3Dfx cards at Descent-Network.com which looks fantastic.

Hitchhiker's Guide, and Leather Goddesses of Phobos.
Now that's what I'm talking about. I used to play both of those constantly. Damn babble fish. Well used to play those and I still remember the original spy hunter on my Tandy 1000. I used to play that game constantly.

Does anyone remember those Microzine games that came in the mail every month for the Apple II? Some of those were pretty cool.

Tie Fighter....that occupied weeks and weeks of my life, first playing, then making levels for my Compuserve squadron: Tie Advanced Recon Squadron Alpha, then making levels for peoples storylines on BBS's. I couldn't get as much into X-Wing, as I was always rooting for the Empire....
And Yeah, Wing Commander is still the end all and be all of Space Combat to me.

Really sad, but still fun,
Legend of Zelda
Final Fantasy I, II, III
There are a couple that I can not remember the name of (wait.... one was BEAST). Both are DOS games and beast is way too fast on the newer systems. The second one lets you be a fighter wizard or thief and the monsters are your various ( shift + number ) symbols. I wish I could find that one again (ahhhh naustalgia......!!!!!!!!!!!!!!)
