Deep fried turkey...

I have had really good deep fried turkey, but most people overcook it, and it ends up being really dry.

On a camping trip we had this and it was just like that. Rubbed with herbs and spices, injected with beer and promptly cooked to darn long so most of the dark meat was no longer meat but some sort of rock hard stuff that was inedible to any creature on earth.

i've never had a bad deep fried turkey.....

i think it would be hard to over cook, but i've never let it go over the recommended cooking time more than a minute or so.

and make sure the turkey is dry, or you'll get the snap-crackle-pop and some flying hot oil from the water hitting that oil

i also just got a rotisserie for my grill and tri-tip on that is the way to go also...

i must say though the deep frier is more of an event in and of itself....
