You know, I saw that too at MS' knowledge base but couldn't figure out how to reassign the keys.
- Open "Customize" from the Tools menu.
- Click on the "Commands" tab.
- Click on the "Edit" menu.
- Click the "Modify Selection" button in the "Customize" window.
- In the "Name" box, type a name for the menu command, with an ampersand (&) before the letter you want as the keyboard shortcut. (Mine looks like this - "&Edit")
- Press enter.
- Close the customize box.
